Ingredients
  1. 2 cups cake flour
  2. 1/4 teaspoon baking soda
  3. 1 tablespoon baking powder
  4. 1 cup + 2 tablespoons cocoa powder
  5. 1/8 teaspoon salt
  6. 1/4 cup + 1 teaspoon unsalted butter
  7. 2 1/4 cup white sugar
  8. 3 eggs
  9. 1 teaspoon vanilla extract
  10. 1 1/2 cups milk
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Sift together the flour, baking powder, baking soda, cocoa, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, 1 at a time, beating well after each addition, then stir in vanilla.
  5. Add the flour mixture alternately with the milk, beginning and ending with the flour.
  6. Fill cupcake cups with an ice cream scoop.
  7. Bake 15 to 17 minutes, or until a toothpick comes out clean.
  8. Cool completely before frosting.

  1. 1 3/4 cups cake flour
  2. 2 cups sugar
  3. 3/4 cup cocoa powder
  4. 2 teaspoons baking soda
  5. 1 teaspoon baking powder

  7. 1 cup buttermilk, shaken
  8. 1/2 cup vegetable oil
  9. 2 eggs, room temperature
  10. 1 teaspoon vanilla extract
  11. 1 cup brewed coffee
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease 2 8-inch round cake pans.
  3. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt in the bowl of a kitchen- aid mixer, on low speed. Combine.
  4. In a medium bowl, combine the buttermilk, oil, eggs, and vanilla.
  5. With the mixer still on low, slowly add the wet ingredients to the dry.
  6. While on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a spatula.
  7. Pour batter evenly in the pans and bake for 35-40 minutes.
  8. Cool in pans for 30 minutes, and then cool completely.

  1. 1/2 cup butter, softened
  2. 1/2 cup peanut butter
  3. 1/2 cup white sugar
  4. 1/2 cup brown sugar or 1/4 cup honey

  7. 1 egg

Instructions
  1. Preheat 375 degrees Fahrenheit.
  2. Beat butter and peanut butter with an electric mixer on medium-high speed for 30 seconds.
  3. Add the white sugar, brown sugar, baking soda, and baking powder.
  4. Beat until combined, scraping the sides of the bowl.
  5. Beat in the egg and vanilla until combined.
  6. Add the flour.
  7. Use a small ice cream scoop make the balls.
  8. Place the balls 2 inches apart on an ungreased cookie sheet.

For the cake
  1. 3 sticks unsalted butter, softened
  2. 2 cups sugar
  3. 5 eggs, room temperature
  4. 1 1/2 teaspoons vanilla extract
  5. 1 1/4 teaspoons coconut extract
  6. 1/4 almond extract
  7. 3 cups cake flour
  8. 1 teaspoon baking powder
  9. 1/2 teaspoon baking soda

  11. 1 cup milk
  12. 1/2 cup sweet shredded coconut
For the frosting
  1. 2 (8 oz.) packages cream cheese
  2. 2 sticks unsalted butter, softened
  3. 3/4 teaspoon vanilla extract
  4. 1/4 teaspoon coconut extract
  5. 3 3/4 cups powdered sugar
For the cake
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Grease two 8-inch round pans.
  3. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed 3 to 5 minutes, until light yellow and fluffy.
  4. Crack the eggs into a small bowl. With the mixer on medium speed, add the eggs 1 at a time, scraping the bowl.
  5. Add all of the extracts and mix well.
  6. The mixture may look curdled; don't be concerned.
  7. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  8. Alternately add the milk and flour mixture, beginning and ending with flour. Mix until combined.
  9. Fold in the coconut with a spatula.
  10. Bake for 50 minutes or until a toothpick comes out clean.
  11. Frost with the coconut buttercream, recipe follows.
For the frosting
  1. In the bowl of an electric mixer fitted with the paddle attachment, combine the cream cheese, butter, and extracts on low speed.
  2. Add the powdered sugar and mix until smooth. (Don't whip)

Ingredients
  1. 2 sticks unsalted butter, softened
  2. 3-4 cups powdered sugar
  3. 2 teaspoon vanilla extract
  4. Pinch of salt
  5. 2-3 tablespoons heavy cream or milk
Instructions
  1. In a mixer fitted with the paddle attachment, whip the butter for about 3 minutes on medium speed.
  2. Add the powdered sugar, 1/2 cup at a time. After each cup has been incorporated, turn the mixer onto the highest speed for about 10 seconds.
  3. Add the vanilla and salt and mix until incorporated.
  4. Add milk or heavy cream until the frosting has reached the consistency you want.
  5. For a firmer frosting, add more powdered sugar, 1/4 cup at a time.
  6. For a softer frosting, add more milk or heavy cream.

For the muffins
  1. 1 1/2 cups all-purpose flour
  2. 3/4 cup white sugar
  3. 1/2 teaspoon salt
  4. 2 teaspoons baking powder
  5. 1/3 cup vegetable oil

  7. 1/3 cup milk
  8. 1 cup fresh blueberries
For the crumb topping
  1. 1/2 cup white sugar
  2. 1/3 cup all-purpose flour
  3. 1/4 cup butter, cubed
  4. 1 1/2 teaspoons ground cinnamon
For the muffins
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a cupcake pan with cupcake liners.
  3. Combine 1 1/2 cups of flour, 3/4 cup sugar, salt, and baking powder.
  4. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.
  5. Mix this with the flour mixture.
  6. Fold in the blueberries.
  7. Fill the muffin cups right to the top, and sprinkle with crumb topping.
For the crumb topping
  1. Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon.
  2. Mix with a fork and sprinkle on muffins before baking.
  3. Bake for 20-25 minutes.
  4. Eat warm or cold.
